Well here you got a great opportunity to cut and shape depending upon a lot of factors,  hook types, drift fishing, rigs,,you name it you can whittle it  ::

For eater channels I like a VMC 5/0 sure set circle hook and use chunks of bait.  for drift fishing and heavy current I prefer strips / fillets and a Kahle hook---2/0 thru 6/0 should fit your needs. and if your using plain ole J hooks just laying around the bottom,,,2 thru size 6 and a smaller chunk in which you can hide most of  the hook ::

When I fish for small blues I cut strips similar in size and shape to a pork trailer used for bass fishing, just about 1/3 narrower.
